Turkey, lentils, and lots of veggies!
2 tsp. ground cumin
sea salt & black pepper to taste
2 tsp. paprika
4 tbsp. coconut oil
3 c. chicken broth
1 1/2 lbs. ground turkey
2 c. lentils
1 c. green beans
6 stlk. celery
1 med. red bell pepper
1 sweet onion
4 med. carrot
2 tsp. cayenne pepper
2 tsp. chili powder
in a medium skillet, brown ground turkey with 2 tablespoons of coconut oil. Season with chili powder, cumin, paprika, cayenne, sea salt, and pepper. Heat remaining 2 tablespoons of coconut oil in a 4 quart pot. Add chopped veggies, and sauté until onions are translucent. Add chicken broth and lentils. Once the turkey meat is browned, add to the pot with the veggies. Bring the pot to a boil for 5 minutes, then reduce to low heat for about 45 minutes.
