This is a great way to get rid of leftovers. Feel free to use chicken or beef as a substitute to turkey.
1 tbsp. dried thyme
1 tsp. butter
1 tsp. extra virgin olive oil
1 tsp. sea salt
1 tsp. black pepper
3 med. carrot
3 stlk. celery
1 med. onion
2 clove garlic
32 fl oz. chicken broth
3 c. water
2 med. white or gold potatoes
4 c. turkey, cooked, free-range, organic
1 1/2 c. green peas
1 1/2 c. pearled barley
1 bay leaf
Saute carrots, celery and onion in butter, olive oil and salt. Once they're soft add garlic and stir until combined. Add chicken stock, water, potatoes, turkey, peas, barley, bay leaf, and thyme. Bring to a boil for about 15 minutes then reduce heat and let simmer until potatoes are soft. Re-season before serving because the potatoes will soak up much of the salt.
