This is so easy to make and surprisingly delicious! Great if you have a panini press at home, but I am sure you can roast in the oven or fry in a pan as well to get the same result!
1/2 c. canned white tuna
1 red bell pepper
1 oz. avocado
1 tbsp. extra virgin olive oil
2 slc. sprouted whole grain bread
Use 1 tbsp of coconut oil to grease panini press once heated up. Place 1 slice of SWG bread in the panini press, fill with 2 ounces of drained canned tuna (approximately 1/2 of a small can) sprinkle chopped red pepper and sliced avocado. Top with another slice of SWG bread and press until warm and toasty!
*As a Protein Type, you can count this as 2 protein, 1 fat, and 2 carb (avocado can count as a carb for Protein Types).
*For variation, I sprinkled lemon juice and pepper before closing the sandwich. You can try other ingredients such as red peppers, onions or whatever you please!"
