Takes only a couple of minutes to prepare with minimal clean-up.The most difficult part is waiting for it to thicken! Very filling and contains Omega-3 too!
1/2 c. homemade almond milk
1 c. pineapple
2 tbsp. chia seeds
1 tbsp. shredded coconut
stevia to taste
1/2 c. homemade coconut milk
Cut pineapple into cubes. Stir together all ingredients in a glass jar or container with a lid or cover. Refrigerate 5-6 hours or overnight so chia can soften and gel up. By tilting container, you can determine if it is ready or not. Sprinkle each serving with additional coconut if desired.
