A timeless Irish recipe. To make cottage pie simply replace lamb with beef.
1 c. onion
1 2/3 c. beef stock
1 tsp. tomato puree
1 tbsp. fresh parsley
1 tsp. fresh thyme
1 tsp. fresh parsley
1 lbs. white or gold potatoes
2 c. mixed vegetables
1 lbs. ground lamb
2 tbsp. butter
Make mashed potatoes from the potatoes: peel and boil potatoes, then mash. Melt butter in frying pan. Add onions, cook for about 5 minutes. Pour in stock (or water) and bring to a boil. Add tomato puree, parsley, thyme and salt and pepper, simmer for 5 minutes. Add meat and remaining vegetables to sauce and bring to boil. Place in a pie dish, cover with mashed potatoes, and score the top. Reheat in a moderate oven (350°F) for about 30 minutes.
