Tomato Soup

Tomato soup with fresh garden ingredients.


    1 tbsp. extra virgin olive oil

    10 roma tomatoes

    1 onion

    2 clove garlic

    1 stlk. celery stalk, fresh, organic

    1 sml. zucchini

    1 tbsp. chicken bouillon

    1 can canned black beans


Heat oil then add the garlic, onion and celery. Sauté for 3-4 minutes. Add the chopped tomatoes, zucchini and black beans. Simmer until most of the liquid dissolves. Taste and add bouillon paste if necessary. Put soup through the blender and serve. You could choose to keep 1-1 1/2 cups back to add to the blended soup if you like chunky bits in your soup.
