Tomato Salsa

A spicy tomato salsa that uses all fresh, organic ingredients. Serve as snack or over chicken / fish


    3 med. tomato

    1/2 med. red onion

    2 jalapeno pepper

    1 lime

    1/2 c. cilantro

    sea salt to taste

    black pepper to taste

    1 pinch dried oregano

    1 pinch ground cumin


Roughly chop tomatoes, jalapeno peppers, and onions. For a less spicy salsa, remove the seeds from the pepper (save them, though - they can be added later if the salsa is not spicy enough).

Place all of the ingredients (except the sea salt and pepper) in a food processor and pulse a few times until all the ingredients are finely diced (you may need to fold the top ingredients after pulsing 2-3 times to ensure a consistent blend).

Let stand in a bowl for an hour to allow the flavors to combine. Season with sea salt and pepper to taste. If the salsa is too spicy, add a little more chopped tomato; if not spicy enough, add the seeds from the jalapeno peppers and a little more cumin.

Recipe makes about 4 cups. A serving would be 1/2 cup of salsa.
