Tomato Artichoke Chicken

The combination of tomatoes and artichokes makes for a delicious chicken dish.


    1 clove garlic

    1/2 lbs. chicken breast

    sea salt & black pepper to taste

    2 roma tomatoes

    8 oz. artichoke hearts


Preheat oven to 350ºF. Combine tomatoes (cored and chopped), chopped artichokes, and minced garlic in a bowl. Season chicken breasts with sea salt and pepper. Arrange in a baking dish. Pour tomato and artichoke mixture into the dish, arranging it around the chicken. Bake for about 40 minutes, until chicken is done (internal temperature is 165ºF).
