This crumble is fairly sweet and indulgent, with a little crunch. My kids love it for dessert!
2 1/2 oz. pecans
3 oz. sliced almonds
2 tbsp. butter
1 1/2 c. old-fashioned oats
2 med. red apple
2 med. pear
1/2 tbsp. lemon zest
1 tsp. lemon juice
1/2 tsp. cinnamon
1 tbsp. maple syrup
3 tbsp. coconut sugar
Peel, core, and chop the apples and pears. Place them in a saucepan, and add lemon zest, lemon juice, and cinnamon. Cook over low heat with a lid on for about 6 to 8 minutes, until slightly soft. Move the fruit mixture into a dish and pour the maple syrup over; toss lightly.
Chop pecans roughly in a food processor. Add oats, butter, and coconut sugar. Mix until the mixture becomes clumpy. Pour into a bowl, add the almonds, and mix by hand to make a more crumbly mix. (It feels a bit softer and moister than usual crumble mixture.)
Place the crumble mixture over the fruit, crumbling it as you go. Bake in a pre-heated oven for 20-25 minutes at 350ºF.
