Everybody in my family loves these cookies!
2 tbsp. honey, raw
2 tsp. vanilla extract
1 1/2 c. almond flour
2 tbsp. coconut flour
1/2 tsp. baking soda
1/2 tsp. sea salt
1/4 c. chocolate chips
1/4 c. palm shortening
1 egg
1/4 c. coconut sugar
Preheat oven to 350°F. Place shortening and egg in food processor and process for 15 seconds. Add coconut sugar, honey, and vanilla and process again until combined. Add flours, baking soda, and salt and process for 30 seconds. Scrape down sides and pulse again to fully mix dry ingredients. Stir in the chocolate chips by hand. Grease cookie sheet with coconut oil or use parchment paper. Place spoonfuls onto cookie sheet and press down to flatten until about 1/2 inch thick. Make 14 cookies, and a serving will be 2 cookies.
