This is my favorite recipe for banana bread! I've made a lot of them and this is the only recipe that doesn't taste like a "healthy version."
4 tbsp. coconut oil
1 tsp. vanilla extract
3 egg
3 c. almond flour
1 tsp. baking soda
1/2 tsp. sea salt
1/2 c. coconut sugar
1/2 c. coconut
1/2 c. pecans
3 med. banana
Combine melted coconut oil, vanilla, eggs, and almond flour in a bowl. Stir to mix well. Add in the rest of the ingredients and stir well. (I didn't use a hand mixer but you could! If you do, just don't put in the nuts in until you're finished mixing the rest of the ingredients.) Use butter or coconut oil to grease the loaf pans. Pour batter into loaf pan(s) - I used 4 mini loaf pans, but you could use a larger one.
Bake at 350°F for about 25 minutes, until a knife or toothpick inserted in the center comes out clean. Watch them closely the last 5 to 10 minutes, all stoves are a little different and you don't want them to burn!
