These pancakes are yummy and healthy.
2 egg
1 tbsp. vanilla extract
1/4 c. water
1 1/2 c. almond flour
1/2 tsp. sea salt
1/2 tsp. baking soda
1 tbsp. arrowroot powder
1/4 c. honey, raw
2 tbsp. coconut oil
Combine the eggs, honey, vanilla, and water in a blender, and process on high for about 1 minute, until smooth. Add almond flour, salt, baking soda, and arrowroot powder, and blend until thoroughly combined.
Heat the coconut oil in a large skillet over medium-low heat. Ladle 1 heaping tablespoon of the batter onto the skillet for each pancake. Cook until small bubbles form on the top; when the bubbles begin to open, flip each pancake.
*Organic chocolate chips or berries can be added to batter for a creative pancake. I made these this morning for my daughters and they said they were better than the boxed type. Yum Yum!
