This is a filling complete dinner filled with a variety of veggies and topped with a tasty peanut sauce for a dressing. The salad doesn't keep well so adjust the amounts for immediate use.
1/2 c. peanut butter, crunchy
1/4 c. water
1/4 c. lime juice
2 tbsp. honey, raw
1/2 tsp. ground ginger
1 tsp. sesame oil
1/2 med. Chinese or Napa cabbage
2 celery stalk, fresh, organic
1/4 c. sweet onion
1 can bamboo shoots, can, organic
1 can canned mandarin oranges
1/2 c. cashews
8 oz. cooked chicken
1 med. carrot
Chop and dice cabbage, celery, carrot and onion into a big bowl. Add drained orange slices, water chestnuts, nuts and chicken. I go light on the dressing and refrigerate the leftover peanut dressing. This is a hubby favorite and also makes a good pot luck salad. I'm sorry I don't have the protein, carb, fat breakdown.
