Thai Green Curry

Thai Green Curry with chicken

Ingredients

  • 1/2 c. fresh basil
  • 4 garlic
  • 2 tsp. ground ginger
  • 1/2 tsp. ground cumin
  • 1 med. onion
  • 1 med. carrot
  • 16 oz. cooked chicken
  • 1 med. red bell pepper
  • 1 c. brown mushrooms
  • 1/2 c. frozen green peas
  • 14 1/2 fl oz. canned coconut milk
  • 1 lime
  • 1 tbs. coconut oil
  • 1 tsp. black pepper
  • 1 dsh. cayenne pepper

Directions

Heat coconut oil in a wok over medium heat. Add all spices. Add chopped onions and chopped carrots, stir and cook for a few minutes until onion is soft. Add chicken (diced or chopped into bite-size pieces), peppers (cut into strips), and mushrooms. Continue cooking for 5 minutes. Add one can of coconut milk. Reduce heat to low, and simmer. Serve and finish with a squeeze of lime and a sprinkle of salt, to taste. ENJOY!!!
