Texas Steph's Famous Healthy Meatloaf

Delicious meat loaf needs no description. The one serving listed is for this entire recipe. To make more servings, just multiply the ingredients. Baking times will vary. If you're not sure if its done, stick a knife in it to see.

Ingredients

  • 1/2 c. old-fashioned oats
  • 2 oz. mild cheddar cheese
  • 1/4 c. carrot
  • 1 egg
  • ground cumin to taste
  • red pepper flakes to taste
  • chili powder to taste
  • 1 tsp. hot pepper sauce
  • 1/4 lbs. ground beef
  • 1/4 onion

Directions

Steam carrots and onions together. Mix all ingredients together in a large bowl. Form into a loaf in a glass baking dish. Add 1/4 cup of water, more or less depending on how moist you want the meatloaf, in the baking dish, around the loaf. Bake at 350ºF for 20 minutes.
