Beef, veggies, and rice... yum!

Ingredients

    1/2 c. green bell pepper

    2 tsp. garlic

    1/2 lbs. ground beef

    1 tsp. chili powder

    1/2 tsp. sea salt

    1/4 tsp. black pepper

    1/4 c. brown rice

    1 tbsp. tomato paste

    1 c. diced tomatoes, canned

    1 c. water

    1/2 tsp. worcestershire sauce

    1 tbsp. coconut oil

    1/2 c. onion

Directions

Heat coconut oil over medium-high heat in a skillet.

Add diced onion and pepper, minced garlic, and ground beef. Sauté, breaking up the beef as it cooks, until the beef is browned. Add chili powder, sea salt, and black pepper while it cooks.

Add rice, stir it all up, and cook for 2-3 minutes.

Add tomato paste, stir well, and cook for another minute.

Add diced tomatoes, water, and Worcestershire sauce. Stir it all up, cover the skillet, and simmer for 20-25 minutes, until the rice is fluffy.
