2 c. canned black-eyed peas
2 c. canned black beans
2 c. corn, canned, organic
1 c. summer squash
1 c. cherry tomatoes
1 c. bell pepper, any color
1 c. sweet onion
1 tbsp. extra virgin olive oil
1 tbsp. apple cider vinegar
1 tbsp. lime zest
2 tbsp. lime juice
sea salt & black pepper to taste
Mix all ingredients together in a bowl and refrigerate. 1 serving is 1 cup.
