Tex-Mex Egg Scramble

A healthy, protein-packed, cheesy, Tex-Mex breakfast!


    1 tsp. coconut oil

    2 egg

    1/2 jalapeno pepper

    1 oz. pepper jack cheese

    1/2 c. cherry tomatoes


Heat coconut oil in a skillet over medium heat.

Lightly beat eggs in a bowl. Add sliced jalapenos and shredded cheese to the bowl, and stir to combine. Pour egg mixture into hot skillet and slowly scramble. Add halved cherry tomatoes just before the eggs are fully cooked. Continue to scramble until eggs are cooked through.
