Great recipe for fall or anytime you have a Mexican craving... and it's healthy!
1 lbs. ground beef
1 c. frozen corn
15 oz. canned kidney beans
2 tbsp. taco seasoning
28 oz. tomato sauce
14 oz. fire-roasted diced tomatoes with green chilies
30 oz. canned black beans
28 oz. diced tomatoes, canned
Brown ground beef over medium heat then drain grease. While cooking beef, simmer the following items on low heat in a large pot: tomato sauce, diced tomatoes, green chilies, corn, kidney beans, Black beans and taco seasoning. Add cooked beef. Bring to boil, and then simmer for 15 more minutes. Serve and enjoy. Leave out the meat for a vegetarian dish too!
