Tacos without the tortillas!
sea salt & black pepper to taste
1/2 med. onion
1 med. bell pepper, any color
1 jalapeno pepper
1 c. diced tomatoes, canned
1/2 lbs. ground beef
2 tsp. chili powder
1/4 tsp. ground cumin
1/4 tsp. paprika
1/4 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. dried oregano
Brown ground beef in a skillet over medium-high heat.
Season with chili powder, cumin, paprika, onion powder, garlic powder, oregano, sea salt, and pepper.
Add diced onion and peppers, and cook until tender.
Stir in diced tomatoes, and let cook until heated through.
Serve over a bed of greens (kale, spinach, arugula, lettuce), quinoa, or rice.
