BOOM. I really don't know what else to say. Taco gone wild.
3/4 c. sharp cheddar cheese
3 romaine lettuce
2 tbsp. taco seasoning
1 lbs. ground beef
2 avocado
4 grape tomatoes
1 jalapeno pepper
1/4 c. sour cream, organic
1/4 c. fresh made salsa
Cook the ground beef with the taco seasoning (make your own!) over medium-high heat until the meat is cooked all the way. Drain excess grease from the pan.
Cut the avocados in half and use a spoon to scoop out the flesh. If you slide a large spoon along the edges, you should be able to get it out in one piece. Seed and dice the jalapeno. Chop the tomatoes. Shred the lettuce and the cheese.
In the empty avocado shells, add 1/4 of the shredded lettuce into the bottom of each shell.
Next, add 1/4 of the ground beef into each shell. Top each one with cheese, salsa, sour cream, tomato, jalapeno, and avocado.
SERVE AND ENJOY!!! (There will be left over avocado.......I just mash them up and divide between the 4 plates and eat a bite of avocado with each bite scooped out of the avocado shell.)
