I had some round steak in the freezer from the side of grassfed beef we bought last fall and was trying to think of something different to do with it. I remembered my grandmother used to make Swiss Steak, but of course didn't use a recipe, so I "created" this one! This can be fixed in the crockpot or pressure cooker.
1 lbs. beef tenderloin
1/2 brown rice flour
1/2 tsp. garlic powder
sea salt to taste
1 lrg. tomato
16 oz. diced tomatoes, canned
1 med. onion
1 c. white mushrooms
1 tbsp. coconut oil
Cut the steak into 4 equal pieces; mix the brown rice flour with the garlic powder, salt and pepper and dredge the steak pieces in the flour. Pour enough coconut oil in a skillet or in the bottom of your pressure cooker and brown the steak on both sides. Add the rest of the ingredients. If using a pressure cooker, pressure cook for 20 minutes. If using a crockpot, cook on low for 6 hours, or until the meat is fork tender.
