This a light salad served cold with a little salty, little sweet flavor!
1 tsp. extra virgin olive oil
4 stevia packet
1 c. broccoli
2 egg
1/4 c. raisins
1 oz. mixed nuts
3 tbsp. apple cider vinegar
In a small bowl mix the vinegar, oil, stevia to make the dressing. Move to the side. In medium bowl, mix the broccoli, raisins, and mixed nuts. Cut up hard boiled eggs into edible pieces. Mix with broccoli mixture. Pour the "dressing" over the broccoli mixture. Cover and shake up well. Refrigerate until ready to eat. I like to refrigerate over night, and eat for lunch the following day. It can be eaten in one serving as 4 proteins, 2 carbs, 1 fat, or adjusted to your needs.
