A big hit for anyone who loves sweet potatoes and sausage! Serves 4 as a main dish breakfast casserole. Serves about 8 as a side dish.
1 lbs. pork sausage
1/3 c. breadcrumbs, made from sprouted whole-grain bread
4 c. sweet potato
4 c. Granny Smith apple
2 tsp. onion
2 tsp. sea salt
1/3 c. maple syrup
1/3 c. apple juice
1/4 c. butter
Preheat oven to 350ºF. Lightly butter a 2-quart casserole dish.
Peel and slice sweet potatoes. Slice apples (leave unpeeled). Arrange alternate layers of apples and sweet potatoes in casserole dish. Sprinkle each sweet potato layer with the minced onion and sea salt.
Thoroughly combine (whisk) maple syrup, apple juice, and melted butter. Pour mixture over casserole. Cover and bake about 1 hour.
Meanwhile, brown sausage, stirring with wooden spoon until crumbly. Drain sausage well and mix with bread crumbs. After one hour, uncover casserole and spread sausage mixture on top. Bake uncovered for an additional 20 minutes.
