This sweet and savory recipe makes a great side to baked salmon, or it can be served with an egg and bacon over it for breakfast.
2 egg
1 sweet potato
1/2 med. onion
1 tbsp. cinnamon
sea salt to taste
black pepper to taste
2 tsp. extra virgin olive oil
Grate the raw sweet potato and onion into a bowl. Beat the eggs and add them to the mixture. Add the other dry ingredients to the mixture. Heat the oil in the pan, and take a scoop of the mixture in hand. Make small patties (about 8) and put into pan and then press on them to flatten them out. Try to make them thin so that everything gets cooked through.
