Sweet Potato Hash

Great side dish for brunch!


    1 lbs. sweet potato

    1/2 med. onion

    1/2 med. red bell pepper

    12 oz. canned black-eyed peas

    1 garlic

    2 tbsp. jalapeno pepper

    2 tbsp. cilantro

    1/4 tsp. dried thyme

    1/4 tsp. sea salt

    1/4 tsp. black pepper


Place peeled and diced sweet potatoes in a large pot. Fill with enough cold water to cover potatoes.

Bring water to a boil, reduce heat to a simmer, and cook potatoes until soft, about 15 to 20 minutes.

Drain and cool potatoes.

In a large bowl, combine the cooled potatoes, sliced onions, diced red pepper, black-eyed peas, chopped garlic, diced jalapenos, cilantro, and thyme. Season with salt and pepper to taste.

Serve cold.
