Delicious salad as a side to any meat dish!
2 lrg. sweet potato
1/2 med. red apple
3 green onion
3 egg
1/2 tsp. sea salt
black pepper to taste
cinnamon to taste
paprika to taste
2 tbsp. extra virgin olive oil
1/2 tsp. apple cider vinegar
Peel and cube the sweet potatoes. Boil sweet potato cubes and eggs in salted water. Remove sweet potatoes after 5 minutes and drain. Continue to boil eggs for another 5 minutes, then immerse in cold water, and peel off the eggshells. Dice the apple and dip into lemon juice to stop discoloring. Combine sweet potatoes, diced hard-boiled eggs, diced apple, and diced green onion. Whisk together olive oil, apple cider vinegar, sea salt, black pepper, and cinnamon. Add dressing to salad, and toss to mix. Move salad to serving bowl and sprinkle top of salad with paprika to garnish before serving.
