This side tastes great with chicken for dinner or eggs for breakfast.
2 tbsp. coconut oil
1 med. sweet potato
1 med. Granny Smith apple
1 pinch sea salt
1/2 tsp. cinnamon
Heat half of the coconut oil in a skillet over medium heat. Add diced sweet potatoes and season with sea salt. Stir everything up, and cover the skillet. Cook for 5-6 minutes, stirring occasionally, until sweet potatoes are tender.
Add diced apple and remaining coconut oil to the skillet. Stir everything together. Continue to cook, stirring occasionally, for another 5 minutes. When the apples and sweet potatoes are brown, remove from heat and stir in the cinnamon.
