Surprise Brownies (Mint Chocolate Variation)

This is a lovely moist and VERY healthy brownie recipe that will fool your taste buds! The surprise ingredient is zucchini which makes them moist and delicious without any vegetable taste! I also tried a variation adding mint chocolate healthy frosting that I discovered yesterday! Makes for delicious healthy moist mint chocolate brownies!

Ingredients

    1/2 c. coconut flour

    2 oz. chopped nuts

    1 1/2 c. zucchini

    4 egg

    1/2 c. applesauce

    2 tbsp. coconut butter

    1/3 c. honey, raw

    1/2 tsp. vanilla extract

    1/2 tsp. baking soda

    1/2 tsp. sea salt

    1/3 c. cacao powder

Directions

Preheat oven to 350F (180C) Mix together all wet ingredients in a large mixing bowl. In a separate bowl mix dry ingredients. Stir dry into wet and mix well. Pour into greased 9x9 inch baking pan and bake. Mine were in for 25 minutes, but you will have to watch them depending on your oven and how soft/cooked you like your brownies. I like em moist and gooey!

  • Mint chocolate variation: Yesterday I made a fresh batch of coconut butter, and was enjoying it in all of it's goodness (mostly by the spoonful) When I looked over on the counter and saw a perfectly ripe avocado needing to be used up. Usually when this happens I make DSP friendly chocolate pudding (which is wonderful)... But I was feeling a creative urge as I was eating coconut butter and so mashed up the avocado with coconut butter, adding a bit of xylitol and stevia for more sweetness, it was all creamy and turned a light mint green color and made me think of mint. Thus I added peppermint extract and voila!!! My own creamy healthy mint frosting (It is delicious and the mint takes away any avocado flavor) So before I popped my brownies in the oven I swirled in some mint frosting. DELICIOUS! I had some left over and used it to ice the rest of the brownies. I recommend giving it a try. Bon Apetit!
