A delicious combination of nutrition-packed foods!
1 c. spinach
1/2 sml. zucchini
1/4 sml. avocado
1 oz. cashews
1 tbsp. pumpkin seeds
4 cherry tomatoes
1 tsp. extra virgin olive oil
1 tsp. lemon juice
Plate spinach. Top with spiralized zucchini, chopped avocado, nuts and seeds, and halved cherry tomatoes. Drizzle with olive oil and lemon juice.
