Great recipe for a new cook. Super Easy.
2 lbs. pork tenderloin
1 salsa
Pour about 1/2 cup salsa into slow cooker. Place Pork Roast on top of salsa. Pour rest of salsa on top of Pork Roast. Cook on high for 2 hours then low for 4 - 6 hours.
This was so tender I had trouble getting it out of the slow cooker because it kept falling apart.
I took two forks and easily shredded the pork and mixed it with cooked brown rice to make burritos.
I left the liquid in the slow cooker.
I used mild salsa but you can go wild and use HOT!
Just two ingredients so if you are new to cooking this is a good recipe to start from. I have not tried this with other meats but I bet it would taste good with chicken or beef. Let me know if you make this and what you did different.
You can actually use whatever size roast you want just remember 1 ounce is 1 Protein. I did not bother adding in carbs because most of the salsa stayed in the pot after removing the meat. The meat had a slightly spicy taste. I'm thinking that the entire 16 ounce jar is only two carbs because it's mostly tomato and a large tomato is 1 carb.
