Quinoa + beef = easy base recipe!
1 c. cooked quinoa
1 lbs. ground beef
2 tsp. taco seasoning
14 oz. diced tomatoes, canned
2 tbsp. jalapeno pepper
2 oz. shredded cheese
Brown ground beef. Sprinkle with taco seasoning, and stir to mix well. Add cooked quinoa, diced tomatoes, and jalapenos (use more or less to your taste). Let simmer for 5 minutes. Top with shredded cheese (optional), and serve hot.
What's so great about this dish is that there are so many variables you can play around with to come up with a variety of meals. Change the seasonings and/or veggies and you have a brand new dish!
