This is a dish we tried out for the first time tonight. Simple but delicious
6 oz. lamb
2 tbsp. orange zest
2 tbsp. lemon zest
1 tbsp. extra virgin olive oil
sea salt & black pepper to taste
1 garlic
Grate the rind of a lemon and an orange.
Place 2 Tbsp of each of the rinds in a bowl. At this point, you can chose to crush a garlic clove or leave it out. Add to the bowl. Add Salt and pepper to your taste (I used a teaspoon of salt and pepper). Add olive oil and mix.
Brush lamb with the mixture and cook on a preheated grill for 4-6 mins depending on your texture of choice. We had some potatoes (like the Rosemary potatoes in my recipe box) to the dish with salad.
Simple, light and quick dinner!
