Delicious mix of sausage and veggies. Healthy and satisfying!
2 med. tomato
1 tbsp. garlic
4 Italian chicken sausage
3 med. zucchini
1 med. onion
1 med. eggplant
sea salt & black pepper to taste
2 banana pepper
Slice the sausages and cook in a large skillet over medium or medium-high heat for 3-4 minutes. Add chopped garlic and chopped onion; saute for 3 minutes. Add zucchini (cut in half lengthwise, then sliced into half moon shapes), eggplant (peeled and chopped), banana peppers (seeded and chopped), and tomatoes (chopped). Cook uncovered for 5-7 minutes, until all veggies are crisp tender and most of the tomato liquid has been absorbed. Season with salt and pepper, and serve.
