No need to skip the cookie cutter cookies this holiday season... try these gluten-free "sugar" cookies made with almond flour and raw honey!
2 c. almond flour
2 egg
2 tbsp. coconut oil
1/2 c. honey, raw
1 tsp. sea salt
1 tbsp. vanilla extract
Preheat oven to 350ºF.
Combine almond flour and sea salt in a large bowl. Add eggs, melted coconut oil, honey, and vanilla extract. Mix well.
Line a baking sheet with parchment paper. Pour half of the batter onto baking sheet and spread out into an even layer.
Bake in oven for 5-7 minutes to firm up dough.
Remove baking sheet from oven. Using cookie cutters, cut dough into shapes. Remove excess dough from baking sheet. Return baking sheet with cookies to the oven, and bake for another 7-10 minutes.
Roll leftover dough into a ball. In between two pieces of parchment paper, roll out dough to an even layer and cut again with cookie cutters. Repeat until all dough is used up.
Repeat steps 3-6 with remaining batter.
