Stuffed Tomatoes

Ham & Pea cold salad Stuffed Tomatoes. Really so quick and easy to make! You can make the salad ahead of time and stuff the tomatoes as you're ready to eat. Hubby & Kid tested! :)


    1/2 c. Unknown (0)

    2 tsp. mustard

    1/8 tsp. black pepper

    2 c. green peas

    12 oz. ham

    2 tsp. dried onion flakes

    8 med. tomato

    8 romaine lettuce


In a large bowl, combine mayonnaise, mustard, and black pepper. Add peas, ham and onion flakes. Cover and refrigerate for at least 30 minutes. Just before serving, slice top off tomatoes and scoop out center pulp and seeds. Spoon about 1/2 cup pea-ham salad into each tomato. Serve on lettuce leaves.

Serves 8

If using frozen peas, place in a colander and rinse under hot water for one minute. I didn't have dried onion flakes when I made this the other day so I just took a small amount of fresh onion and Very Finely minced it up and used that instead.

This is one of those types of recipes that you could alter in so many ways! In the meats and veggies you use and also the spices. Each time you could change it. :) I've used chicken salad in these tomatoes before, too.
