This is a delicious take on potato skins I prefer these over the restaurant ones.
1 med. russet potatoes
1 oz. ham
1/4 c. sharp cheddar cheese
sea salt & black pepper to taste
1/2 tsp. extra virgin olive oil
Preheat oven to 400ºF.
Grease potato with olive oil. Bake potato for 30 minutes, until cooked through. Cut potato in half after cooking, scoop out flesh, and reserve for another use leaving about 1/4 inch inside potato skin.
Place chopped ham and shredded cheese in each potato and bake for about ten minutes. Season with salt and pepper. Greek yogurt works really well here in place of sour cream. You can also top with green onions if you like.
