2 med. green bell pepper
1/2 lbs. ground beef
2 tbsp. onion
1 can canned kidney beans
8 oz. tomato sauce
3 tbsp. taco seasoning
1/4 c. Greek yogurt
1/4 c. mild cheddar cheese
1/4 c. tomato
Cut tops off the peppers, cut in half lengthwise and remove seeds. In a large pot, cook peppers in boiling water for 3-5 minutes. Drain and rinse in cold water. Set aside.
In a large skillet, cook the ground beef or turkey and onion over medium heat until meat is no longer pink; drain off any fat. Stir in the beans, tomato sauce and taco seasoning; bring to a boil. Reduce the heat; simmer, uncovered, for 5-6 minutes or until heated through.
Spoon the meat mixture into the peppers. Place in an ungreased 8 inch square baking dish. Bake, uncovered, at 350 degrees F for 10-12 minutes or until peppers are tender. Top with yogurt, cheese and tomatoes. I also added some sliced green olives just because we love them with anything taco flavor. :)
You could add more spice or hot peppers to this if you'd like!
