Deconstructed stuffed peppers make for a delicious soup!
1/2 lbs. ground beef
1/2 c. onion
2 clove garlic
1 c. bell pepper, any color
1 c. diced tomatoes, fresh
1 c. tomato sauce
1 1/2 c. beef broth
1/4 tsp. dried basil
1/4 tsp. dried oregano
1/2 c. cooked quinoa
In a large pot, brown ground beef over medium heat with diced onion, chopped bell peppers, and minced garlic. Add remaining ingredients, cover, and let simmer for 20-30 minutes.
