Stuffed Chicken Breast

Beautiful recipe to have for lunch or dinner... especially when having visitors.

Ingredients

    4 chicken breast

    2 tsp. fresh parsley

    2 tsp. dried sage

    2 tsp. fresh thyme

    2 garlic

    4 tsp. dijon mustard

    4 pce. uncured bacon

    2 tsp. butter

    1/4 c. chicken stock

    sea salt to taste

Directions

Preheat oven to 350°F.

Place chicken breast on chopping board. Place a piece of parchment paper on top, and pound until thin.

Mix together herbs and garlic in a small bowl.

Spread mustard on each chicken breast, top with bacon, and then place garlic mix on each breast. Starting from the wider end of the chicken, roll as tightly as possible. Tie with cooking string in several places to hold together.

Melt butter. Place chicken in baking tray, and cook until golden brown. Pour chicken stock over the top, and cook for 10 minutes. Take out of oven, cover with foil, and set aside for 5 minutes. Remove string, slice chicken into small pieces, and serve with salad or vegetables.
