Stuffed Baked *Potato Boats*

This makes 12 (2 each per person/serving) *boats* (stuffed potato skins). My kids and husband always want 2 each and I love to freeze them for another time, too! So delicious and Hubby & Kid tested & Loved always! :) My kids thought they were like little boats so that's how they got their name. lol :)

Ingredients

    6 med. baking potatoes

    1 tbsp. butter

    1 tsp. hot pepper sauce

    1 c. cooked chicken

Directions

First, bake your potatoes. Wash well and fork pierce. Bake at 400 degrees F for 40-50 minutes or until tender. Cool slightly, then cut each potato in half lengthwise. Carefully scoop out the potato pulp (lol that sounds funny but you know what I mean). Leave a thin shell...don't take it all the way down to the skin. Save the potato pulp you remove for another time Place the potato shells (face up) on an un-greased baking sheet.

In a small cup, combine butter (melted) and 1/2 teaspoon hot pepper sauce. Brush over the potato shells. Broil 4 inches from the heat for 5 minutes or until edges are crispy and butter is bubbly.

Now, in a skillet which is lightly greased add the onions, red pepper, broccoli, pre-cooked chicken and salt and pepper (to taste and optional) and saute for a minute or two just to warm and slightly cook the veggies. Remove from the heat and add the remaining 1/2 teaspoon hot pepper sauce and 3/4 of the shredded cheese. Mix gently and quickly so the cheese don't totally melt and get too hard to transfer to the potato skins.

Spoon mixture into potato boats (shells). Sprinkle with the remaining cheese. Broil 2-3 minutes or until cheese is melted and they are warmed through. Keep an eye on them!

You could top with a bit of Greek yogurt if you'd like. These seem to freeze well for me as long as I pack them carefully. Though I've not frozen them with the Greek yogurt on top.

I love to add chicken or ham etc to these stuffed potato boats. But you could do them without and there would be no protein then & You could add less cheese but......what's potato skins without cheese? :)
