Strawberry Chocolate Cake

Life is full of special occasions, so treat yourself to a rich and delicious chocolate cake with a strawberry surprise. It’s hard to believe this cake is healthy and gluten-free – it’s that good. You won’t need more than a thin slice to satisfy your sweet tooth!

Ingredients

    1/2 c. chocolate

    1 1/3 c. chocolate chips

    4 tbsp. butter

    1 tbsp. maple syrup

    1 c. strawberries

    1 c. almond flour

    1/4 c. coconut flour

    1/2 c. cacao powder

    1 tsp. baking soda

    1/2 tsp. sea salt

    1/2 c. maple syrup

    1/2 c. butter

    4 egg

Directions

Preheat oven to 350ºF. Grease two 6-inch cake pans.

Mix dry ingredients together in a large bowl. Add maple syrup and melted butter, and mix thoroughly. Add raw, room temperature eggs; mix with an electric hand mixer for 30-60 seconds. Fold in chocolate chunks.

Divide batter between two, greased 6-inch cake pans. Bake for 35-45 minutes or until a toothpick inserted in the center comes out clean. Let cool for about 30 minutes before attempting to frost the cake.

While the cake is baking, make the frosting. Place a glass bowl over a pot of simmering water. Add chocolate chips and stir gently. As the chocolate begins to melt, continue stirring, add 4 tablespoons butter and 1 tablespoon maple syrup. Once all ingredients are melted and thoroughly incorporated, remove from stove and let cool.

To assemble the cake, spread chocolate frosting on bottom layer of chocolate cake. Add a few sliced strawberries to the center of the bottom layer. Add more frosting so it acts like a glue between the top and bottom layers. Gently press top layer onto bottom layer. Secure layers by adding frosting to the “gap” between the cakes. Spread frosting over sides and top of layered cake. Scatter remaining sliced strawberries around the side or top.

Notes: If you want to double this recipe, bake the cake in two 9-inch cake pans. All the ingredients in this cake are super healthy, but it should still be considered a once-in-a-while treat as it does contain quite a bit of (healthy) fat per serving.
