So many delicious flavors in this salad!
2 c. strawberries
1 med. avocado
4 oz. blue cheese
1/4 c. slivered almonds
6 c. spinach
1/2 c. extra virgin avocado oil
3 tbsp. apple cider vinegar
2 tbsp. honey, raw
1 tbsp. poppy seeds
sea salt & black pepper to taste
MAKE THE DRESSING: Combine avocado oil, apple cider vinegar, honey, poppy seeds, sea salt, and pepper. Whisk together until everything is evenly incorporated.
PREPARE THE SALAD: Combine spinach, strawberries (hulled and sliced), chopped avocado, crumbled blue cheese, and slivered almonds. Toss together with dressing.
