A delicious quick salad... especially if you have leftover steak from the night before!
8 oz. beef tenderloin
sea salt & black pepper to taste
3 c. mixed greens
2 tbsp. balsamic vinegar
2 med. bell pepper, any color
4 tbsp. sliced almonds
Season beef tenderloin with sea salt and pepper. Grill to desired doneness.
Toss mixed greens with balsamic vinegar in a large bowl. Add chopped peppers, sliced almonds, and grilled beef tenderloin (sliced or cubed); toss to combine. Enjoy as is or toss with Isabel’s Famous Salad Dressing.
