This is a real simple salad that tastes awesome, has a ton of protein, and is easy to make. The arugula adds some spice and is countered by the creamy avocado & raw chedder cheese.
1 lbs. beef flank steak
3 avocado
1/2 c. cherry tomato
2 c. arugula
1/2 red onion
4 oz. mild cheddar cheese
Cook the steak on a skillet to taste - I recommend medium rare.
While it's cooking, prepare the salad: Chop up the red onion into little squares. Cut up the cheese into little rectangles. Make sure your avocado is RIPE and slice it up. Dish some arugula (spinach also works) into each salad bowl. Mix in the red onion, whole grape tomatoes, avocado, raw cheese. Top with your favorite salad dressing.
When your steak is done cooking, slice it into thin strips. Place it on top of the salad and add sea salt & fresh cracked pepper to taste.
