Summer Squash Patties
1 egg
1 sea salt & black pepper
1 coconut oil
2 summer squash
1/2 onion
grate both squash. . .dice onion. . .add egg. . .salt and pepper. . . stir. Heat oil on med heat. . . using a large spoon- spoon mixter into oil. . .cook about 5 min. . .should be stiff enough to turn. . .cook another 5 min. . . will be soft so handle careful. . .Taste Great! ( can add coconut flour, I liked it just as well without) 2 patties should equal 1 protein and 2 carbs. . .depending on size of pattie. . .I ate 2 patties =)
