This is a very nutritious, easy, one-bowl side dish with minimum clean-up.
1 tsp. cinnamon
1/2 tsp. curry powder
1 tbsp. shredded coconut
2 c. acorn squash
2 med. red apple
1/4 c. raisins
1 tbsp. lemon juice
1 tbsp. coconut oil
2 tbsp. apple cider vinegar
Preheat oven to 350ºF. Peel acorn squash, and cube into small to medium pieces. Cut apples into cubes.
Combine acorn squash pieces, apple pieces, raisins, lemon juice, coconut oil (broken into chunks - it'll melt while baking), apple cider vinegar, cinnamon, and curry powder in a medium bowl. Stir to mix well. Pour mixture into a small casserole dish. Cover with lid; bake for 30-40 minutes, until desired doneness. Stir before serving. Sprinkle with shredded coconut.
