Springtime Garden Pilaf

This a delicious side dish!


  • 2 3/4 c. chicken broth, organic, free-range
  • 1/4 c. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1/4 tsp. sea salt, unrefined and pure
  • 1/8 tsp. black pepper, ground, organic
  • 1/4 tsp. garlic, fresh, organic
  • 1 1/4 c. rice, brown, organic
  • 1/2 c. carrot, fresh, organic
  • 1/2 c. almond, sliced, organic, raw
  • 1/4 c. parsley, fresh, organic
  • 2 tbs. green onion, fresh, organic


In 2-quart saucepan bring broth, butter, salt pepper and garlic to a full boil (5 to 7 minutes). Add rice and finely chopped carrots; return to full boil. Reduce heat to low; simmer until rice is tender (25 to 30 minutes). Stir in slivered almonds, chopped parsley, and sliced green onion.
