Hearty soup and easy to prepare - in the crockpot! Leftovers can be stored for an easy meal later!
1 sml. onion
2 carrot
1 stlk. celery stalk, fresh, organic
1/2 med. red bell pepper
2 clove garlic
1 tbsp. fresh thyme
1 bay leaf
1 sml. ham
sea salt & black pepper to taste
1 qt. chicken broth
12 oz. split peas
Add chicken broth to crockpot. Add split peas, onion, carrots, celery, bell pepper, garlic, thyme, bay leaf, and ham hock; season with Sea Salt and ground black pepper.
Cover and cook on high until split peas are creamy, about 6 hours, stirring occasionally. I cook on low, about 8 hours.
Remove ham hock from pot. Discard skin and bones, dice meat. Discard bay leaf. Lightly mash peas with the back of a large wooden spoon. Return ham to soup and season to taste with additional Sea Salt and black pepper.
*The number of protein servings will depend on the size of the ham hock and how much ham is used. It will typically be between 1/2 and 1 protein serving.
