Welcome to flavor-ville! Delicious Spinach side dish with prosciutto and cannellini beans.
2 baby spinach
4 garlic
1/3 lbs. prosciutto, grass-fed, organic
1/3 c. extra virgin olive oil
1 can cannellini beans
sea salt & black pepper to taste
1 tbsp. lime juice
Chop garlic and prosciutto and place in large skillet with olive oil. Saute for a couple of minutes. Add salt & pepper and can of beans. Saute for a couple of minutes. Squeeze lime and add 2 bags of spinach. Sprinkle more olive oil if you want and saute covered for about 10 minutes. Mix and serve. Caution: the delicious smell in the kitchen might attract neighbors and others!!
